This is the first new recipe I have made this week. I wasn’t sure if this one would be a success or not, because it is pretty healthy. Children tend to be suspicious of healthy meals especially if they include broccoli. I was pleasantly suprised when they ate it and didn’t complain. It wasn’t as popular with them as say the chicken rice caserole, but my husband and I loved it.
Ingredients:1 lb. boneless skinless chicken breasts, cut into 1-inch pieces 1/2 c. Italian Dressing, divided 2 c. Broccoli florets (about 1 small bunch) 1/2 c. thinly sliced onions (I used chives and not as much as the recipe calls for) 1 1/4c. chopped red peppers (Green tasts good as well) 1 T. choped frsh parsley 1 pkg. (8 oz) spiral pasta, cooked, drained 1/4 c. grated Parmesan Cheese
Cook and stir chicken in 1/4 c. of the dressing in large skillet on medium-high heat 4 minutes or until no longer pink.
Addbroccoli, onions (chives), peppers, and parsley; cook until tender, stirring occasionally.
Toss with hot past and remaining 1/4 c. dressing. Sprinkle with cheese.
